A few weeks ago I put the garden to bed for the winter.  All the tomatoes were removed and the green tomatoes, lingering on the vines
were made into dill pickles.
My husband says they are a taste sensation with his home made pepperoni!
The basil was all pulled out and made into pesto before the cold killed the plants.
I discovered that pesto quickly oxidises and turns brown, which make me wonder what's in commercial pesto to stop that!

Pesto Recipe
  • 2 cups fresh basil leaves
  • 1/4 cup of grated parmesan
  • 1/2 cup of olive oil
  • 3 tblsp of pine nuts
  • 3 cloves of garlic

Process everything until smooth.

Roasted Green Tomato Tart (from Gardening Australia Magazine)

  • 7 green tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp caster sugar
  • 2 sheets of puff pastry
  • 1/3 cup of olives
  • 1/4 cup of red onion, thinly sliced
  • 12 anchovies.
Sprinkle tomato halves with sugar and and oil at 200C for 30 mins.
Top pastry sheets with tomatoes, olives, red onion and anchovies.
Bake for 20 mins until golden and puffed.
