A few weeks ago I put the garden to bed for the winter.
All the tomatoes were removed and the green tomatoes, lingering on the vineswere made into dill pickles. My husband says they are a taste sensation with his home made pepperoni! The basil was all pulled out and made into pesto before the cold killed the plants. I discovered that pesto quickly oxidises and turns brown, which make me wonder what's in commercial pesto to stop that! Pesto Recipe
Process everything until smooth. Roasted Green Tomato Tart (from Gardening Australia Magazine)
Top pastry sheets with tomatoes, olives, red onion and anchovies. Bake for 20 mins until golden and puffed. |
